VALORIZAÇÃO DAS CASCAS DE PITAYA VERMELHA: CARACTERIZAÇÃO DA FARINHA OBTIDA EM DIFERENTES TEMPERATURAS E APLICAÇÃO EM BISCOITOS AMANTEIGADOS
Pitaya processing generates large quantities of peels that are usually discarded. To add value to this waste product, it can be transformed into flour via convective drying and used as an ingredient in bakery products. In this context, the study aimed to characterize a mass of dried pitaya peel dehydrated by convection at different temperatures and to use it in the production of butter cookies. The byproduct was dehydrated at 70, 80, and 90 °C for subsequent physicochemical characterization. Based on the results, the best sample was incorporated into the cookies at proportions of 0%, 3%, 6%, and 9%, which were then subjected to nutritional evaluation. Increasing the drying temperature significantly reduced (p<0.05) moisture content, thereby enhancing stability and concentrating various constituents of the waste. Drying at 80 °C resulted in the highest ascorbic acid retention and the best overall physicochemical characteristics, leading to its selection for cookie production. In the cookies, the addition of the flour increased mineral and carbohydrate content but reduced lipid and protein levels as well as caloric value. Furthermore, increasing the proportion of the waste intensified browning and imparted slightly reddish tones to the cookies. The results indicate that pitaya peel flour is a viable ingredient for producing shortbread cookies with improved nutritional quality.

O ensino de química em período pandêmico e pós-pandêmico em uma escola do alto oeste potiguar: o uso das tecnologias digitais da informação e comunicação - TDICs
This study analyzes the integration of Digital Information and Communication Technologies (DICTs) in Chemistry teaching at a public school in the Alto Oeste Potiguar region, spanning from its emergency use during the COVID-19 pandemic to its current permanence in in-person education. The general objective was to analyze the perception of students from a school in Alto Oeste Potiguar regarding their Chemistry learning concerning the use of DICTs during the pandemic and post-pandemic periods. Methodologically, the research adopted a qualitative, descriptive, and exploratory approach, utilizing both bibliographical and field research. Data collection was carried out through a questionnaire applied to 22 participants, including 8 alumni from the year 2021 and 14 students from the year 2025. The results indicate that platforms such as Google Classroom, WhatsApp, and YouTube were essential for the continuity of classes during social isolation, and they continue to serve as pedagogical supports upon the return to classrooms. Specifically in Chemistry, the use of virtual simulators such as PhET and Javalab, videos, and the use of Artificial Intelligence stood out, facilitating learning and increasing student engagement. It is concluded that, despite the challenges, the pandemic led to the development of new teaching approaches through technology. As a continuation, it is suggested to analyze teachers' perceptions of DICTs and the growing influence of Artificial Intelligence in education.

This work aims to analyze the concept of galactic habitability in the Milky Way,
emphasizing the influence of the massive variation of stellar bodies and their proximity
as determining factors for the existence and maintenance of potentially habitable
environments. The study is bibliographically situated within the field of astrobiology, an
interdisciplinary science that investigates the conditions necessary for the emergence of
life at different cosmic scales. Starting from the notion of a planetary habitable zone, the
work expands the scope of the analysis to the galactic context, considering factors such
as stellar density, radiation, and orbital dynamics. In the inner portions of the galactic
disk, close to the nucleus, a high concentration of massive stars, a higher rate of
supernovae, and intense emission of gamma radiation and cosmic rays are observed
conditions that tend to make these regions hostile to the stability of planetary systems and
the preservation of atmospheres. On the other hand, data shows that more distant, but not
extremely dispersed, regions tend to present less risk to the stability of planets and moons.
Thus, the research shows how the distance and density between stellar bodies become
critical parameters: very dense regions increase the risk of gravitational disturbances and
destructive events, while very dispersed regions reduce the probability of planetary
formation.
